This is primarily a question about how you use your iPad on the job, because I already know everyone uses it for Angry Birds. :)
I recently saw a post in the NBAA Airmail about all the different apps that are available in the aviation field, and cockpit usage has jumped tremendously over this last year - so much so that GlobalAir released their own app last year for pilots, so they can find the best fuel prices on their trips.
Is there any kind of app that would make your job easier that doesn't exist yet?

E-ALP, that would be great. Also, if I had a slick way of letting my operations staff use iPads while doing inspections (wirldlife, lighting, special inspections etc), that would be the fantastic. What I am envisioning is whoever is doing the daily runway check, grab the ipad and hit the "AOA" app button. I menu pops up asking user name, time of day, and type of inspection. Then, a simple checklist shows with popup descriptions explaing what to look for. The user then has to "accept" or "not-accept" each item as they go though. If there was a GPS option, having location aware checklists might be applicable. Then, when the inspection is done, once they are back to the office, the ipad will automatically send the completed inspection sheet to whatever server/computer for fileing unless some descripancy was found, in which case it would create a short list of what was found not to be correct. The app would not clear the descripance until management either cleared it or some other second check....
Thinking out loud on this one a little maybe, but I can envision something like that in the future, perhaps as part of this SMS stuff.
IPADs may be used by airport ops and management for E-ALPs in the future and keeping them up to date.
I use my iPad for work quite extensively. Right now I use a combination of Notetaker HD for airport project notes, Evernote for archiving webclips, completed project notes and reciepts/invoices, Penultimate for jotting down day to day notes (the type of stuff you scribble down when taking phone calls), GoodReader for PDF markups, ArcGIS and AutoCAD WS/Skitch for GIS and drawing applications ultizing Dropbox and of course I use the default reminders, contacts and mail programs with our Exchange Server. For presentations, GoToMeeting, Slideshark and Pointer. I have tried just about every "all inclusive" note taking app out there and to be honest, if I could get handwriting and PDF markup in something like Evernote, it would probably be the only "work" app I'd need.
Now, non-work related apps.....sheese.....the list is long...
